The 2.81 distillation process created by Alexander Cowie nearly 200 years ago remains unchanged to this day. Known by all as “The Way,” only he knew why each of the six stills has a different shape, and why the copper pipes are tangled in such a fashion for cutting and re-cutting the spirit.
Three wash stills and three spirit stills, all gleaming copper, but each completely unique in size and shape.
